"Doing what is right, fair and honorable is more important than winning or losing."

This quote means that doing the right thing is more important than winning or losing. When you do the right thing you win, if you choose to do wrong then you lose. For example, when there is a test and if you study, then you win. If you didn't study for the test you'll probably lose. Another example is, If your playing a sport and someone falls in the opposite go ahead and help neither way way if you're winning or losing. If you probably didn't help that person you're probably not showing sportsman ship. You choose the right for yourself and others. You don't have to do what people tell you.
